How long should a title and description be?

Keep titles to about 60 characters and descriptions to about 160. Longer text may be cut off in search results, and the counters turn red when you go over.

What size should the social image be?

1200 x 630 pixels works well for most platforms. Use a full web address (starting with https://) for the image.
